Pumpkin Roll Recipe

Grandma Jackie/Ruth


1 c sugar
2 eggs
3/4 c pumpkin
3/4 c flour
1 tsp salt
1 1/2 -2 tsp pumpkin pie spice
1 tsp baking soda
1/2 c chopped walnuts

1 8 oz cream cheese
2 tbsp. oleo
1 c sugar
1 tsp vanilla

Mix sugar, eggs and pumpkin

In another bowl mix flour, salt, pumpkin spice, baking soda

Add mixed dry mixture to sugar, egg pumpkin mixture

Pour onto greased 8x11 cookie sheet
Sprinkle nuts over top

Bake 15 minutes at 350 until top of cake springs back
Loosen and turn cake onto a cotton towel sprinkled with powder sugar. Roll up cake and towel together and cool

Filling - Beat cream cheese, oleo and sugar together until smooth

Unroll cake and spread cream mixture over cake
Reroll cake and wrap in plastic wrap and refrigerate at least one hour
Sprinkle with powder sugar if desired before serving
