4 medium potatoes washed
2 large carrots peeled
1 sweet potato or other squash
4 large washed beets
1 bunch trimmed and washed asparagus
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
Quarter potatoes and cut up carrots, squash and beats to similar sizes. Toss all vegetables including asparagus with olive oil and salt and pepper. Place on cookie sheet, removing asparagus and bake at 350 til soft and brown. Add aspargus for the last ten minutes.
