1 1/4 c Brown Sugar
1/2 c Vegetable Oil
1 Egg
2 tsp Vanilla
1 c Buttermilk
2 1/2 c Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 1/2 c Rhubarb Finely Chopped
1/2 c Walnuts Chopped

Topping
1 tbsp. Butter, melted
Mix 1/3 c Sugar with 1 tsp cinnamon

Directions:
Directions:
Cream together brown sugar and vegetable oil
Mix in egg, vanilla and buttermilk
Add dry ingredients and blend well
Fold in rhubarb and nuts
Grease muffin tins or use cupcake papers
Fill 2/3 full
Bake 400 20-25 minutes
** when baked, dip each muffin into melted butter, then cinnamon & sugar mixture
