3/4 lbs Shrimp ( I use 1 package of the frozen shrimp)
1 tbsp olive oil
1 large onion
1 tbsp garlic ( 1-2 cloves)
2 tbsp flour ( tapioca or arrowroot)
1 can of tomatoes ( 14.5 oz)
1 c chicken broth
1 1/2 c water
2 c sweet potato, diced
1 c frozen corn (omit if paleo, add another vegetable in its place)
1 c green pepper, diced
1 tbsp ground thyme
1/4 tsp pepper

Peel and de-vien shrimp. Set shrimp aside. In a medium saucepan, heat oil over medium-high heat. Add onions and garlic, cook for 10 seconds. Stir in flour, cook for additional 5 seconds. Add tomatoes, broth and water. Bring to a boil. Add potatoes, corn, green pepper and black pepper. Cover and reduce heat to medium-low. Simmer for 10 min or until the potatoes are tender. Add shrimp and thyme. Increase heat to medium-high till shrimp are cooked approximately 3-5 min.
