Ingredients: YEILDS: 4 x 250 ml jars jelly
1 1/2c (375ml) finely diced red pepper
3 large clove garlic
3/4 c. (175 ml) cider vinegar
3 c. (750 ml) granulated sugar
1 pouch (85 ml) liquid pectin

Directions:İRED SWEET PEPPER & GARLIC JELLY (yields 4 x 250 ml jars jelly)
- Sterilize (4) - 250 ml jars for processing and filling - put jars in boiling water 180 degrees F /82 degrees C. Heat and simmer.
- In a saucepan heat lid discs in boiling water ( 180 degrees F/ 82 degrees C. Keep jars and lids hot.
FINE dice sweet red peppers; do not puree peppers. Measure 1 1/2 cups 375 ml diced peppers into large stainless steel saucepan.
FINELY chop garlic add to red sweet peppers with sugar and cider vinegar.
OVER high heat bring mixture to high full boil - rolling boil that cannot be stirred down.
ADD liquid Pectin squeezing all contents from pouch. Boil hard 1 minute; stir constantly - remove from heat - skim off foam.
QUICKLY pour liquid jelly mixture in jars- put lid discs on clean rim on jars; screw tops and tighten.
PROCESS for 5 minutes - jars will ping when sealed and set to cool. |

Notes: SWEET PEPPER JELLY is a condiment used with Brie and ricotta cheese or soft cheeses in general. Try using this Red Sweet Pepper Jelly with Ricotta mixture when making Cannelloni simply delicious served with roasted red pepper sauce parmesan....adding a little sweet zing to this tasty Italian pasta dish. Another good use of the jelly is dabbling it on Brie cheese appies.
