2 Lbs Sweet Italian Sausage - cut into 2" pieces
1 Lb Italian Sweet Peppers sliced in rings
1 Large Onion sliced in rings
2 Tbsp Olive Oil
4 cloves Garlic smashed
1 28 oz can of San Marzano Plum Tomatoes
Dash Balsamic Vinegar
Salt And Pepper -- to taste
1 pinch Crushed Hot Red Pepper -- Optional

Directions:
Directions:
Place olive oil in hot skillet - add sausage and fry over med-high heat for about 20 minutes until well browned , Add onions, garlic and vinegar - about five minutes later add the peppers and cook for about 10 minutes. Add the tomatoes and spices - simmer covered for 2 hours
