1 lb Cavatelli
1 lb Chicken Breast, boneless/pieces
˝ bunch thinly sliced Broccoli Florets - or1 pkg Frozen Broccoli -- thawed
1/3 cup olive oil
4 ozs chicken broth
4 lg garlic cloves-finely chopped
2 ea shallots chopped
2 ea plum tomatoes-coarsely chopped
1 tbsp Basil, fresh chopped
1 tbsp parsley chopped
Hot Pepper Flakes (Optional)
Oregano, Salt and Black Pepper -- to taste

In large skillet, heat oil, and lightly sauté 1/2 of the garlic - brown. Add chicken pieces and brown. Set aside in heated bowl. Add remaining oil, shallots and garlic - sauté until golden brown. Add chopped tomatoes and continue to sauté. Add chicken broth. Bring to boil. Lower heat and simmer for 5 - 10 minutes. Add chicken and spices, and continue cooking at low heat. Meanwhile Cook Cavatelli per pkg directions - about 3 minutes before end of the cooking period, add the broccoli to the same boiling water. Once the water returns to a boil, stop cooking - drain pasta and broccoli and add to chicken stock mixture, stir thoroughly and heat through. Sprinkle with grated Parmesan or Romano cheese and serve hot.
