1c vegetable oil
1/2c tarragon vinegar or white vinegar
1 t tarragon leaves
1/2 t salt
1/8 t pepper. I like using white pepper when I do not want it to be seen
1/2 t Dijon mustard
3 T sugar
1 small can mandarin oranges
1/3 sliced almonds
1/3 c bacon bits you can fry bacon and use what you want or get the real bacon bits from the store, not the hard ones
1 small onion finely diced
1 head of lettuce chopped

Directions:
Directions:
Wash the lettuce. Chop to desired pieces for a salad. Be sure it is dry before using. A salad spinner is great for this. If you do not have one, use a clean dish towel and gently blot dry til most of the moisture is gone. When ready, put into a large bowl, add the oranges, bacon bits and onion. Mix the oil, vinegar. tarragon leaves, salt and pepper, sugar and mustard in a jar and shake to mix. Pour only half onto your salad. Fold to blend. Save the rest of the dressing for later.
