3 c. water
3 tbsp. red wine vinegar
4 tbsp. smoked paprika
1 1/2 tsp. salt
1 1/2 tsp. granulated sugar
1 1/2 tbsp. freshly ground black pepper
1 1/2 medium sweet white onions, chopped
1 1/2 large tomatoes, seeded and chopped
4 tbsp. chopped fresh parsley
6 large baking potatoes, scrubbed and cut into two inch chunks
1 1/2 lb. smoked sausage, thinly sliced

Directions:
Directions:
Pre heat oven to 374 degrees.
Pour water into a roasting pan. Add vinegar. Sprinkle paprika and sugar over the water; mix to rmove the lumps. Add salt, pepper, onion, tomato, parsley, potatoes and sausage. Toss and mix well.
Bake uncovered for 1 1/2 to 2 hours. Stir a few times while cooking.
