2 boneless chicken breasts
2 slices ham or bacon
2 slices Swiss cheese
1 egg, beaten
Flour
Panko Breadcrumbs

Directions:
Directions:
Cut the chicken breast from top to bottom trying to keep it joined, place between gladwrap and pound until the breast is fairly thin. Place the ham or bacon plus the cheese slice on one half of the breast, fold over the other half, do the same for the other breast. Dip each breast into the flour until covered all over, then dip into the beaten egg, then press into the breadcrumbs until nicely coated all over. Place on a plate and refrigerate for 30 minutes to set.
Fry in fairly hot oil until nicely brown and cooked to an internal temperature of 170f or 77c. If you would rather less fat, fry both sides to colour and cook in the oven at 180c for20 - 30 minutes, again the same internal temperatures.

You can use normal breadcrumbs, but the Panko ones give a much better coating.
