Ingredients: 2 cups flour 1 cup butter or margarine, always use the ratio of 50% fats to 100% flour 1/2 tsp salt Cold water or lemon juice 1 egg (optional) makes for a richer base ********************** Filling 1 onion chopped bacon rashers chopped (optional) 3-4 eggs 300ml cream 3/4 cup mixed cheeses ********************* This is just the basics. You can add all sorts of other ingredients: asparagus, sliced tomatoes, cooked mixed vegetables, leeks and spinach.

Directions:To make the pastry, mix flour and butter together until it resembles fine breadcrumbs. Add salt and egg, if using and sufficient water to make a dough and mix until it becomes smooth. Cover in gladwrap and refrigerate for 30 minutes. Grease and line a 23cm flan tin. You can bake blind for 20 minutes or add filling straight away. ************************************** Gently fry the onion and bacon (if using) until soft, put to one side. In your mixing machine mix together the eggs, cream and mixed cheeses. Season to taste. Put the onions etc. into the flan tin then add any other fillings before pouring in the egg mix. Bake at 180c for approx. 30-35 minutes until nicely browned and set. Allow to cool slightly before removing from flan. Can be eaten hot or cold. |
