1 package of smoked sausage (more if you like) (sliced)
1 green bell pepper (sliced)
1 red bell pepper (sliced)
1 yellow onion (sliced)
1-2 squash (sliced)
1-2 zucchini (sliced)
2-3 potatoes (sliced)
2-3 cloves of garlic (minced)
salt (to taste)
pepper (to taste)
vegetable Oil

Directions:
Directions:
Preheat oven to 425º. In a large roasting pan combine all ingredients and add salt/pepper to taste. Add vegetable or olive oil just enough to coat all the veggies and sausage. Cover with foil and cook 30-40 minutes or until vegetables are soft. Serve by it self or over rice. This recipe is versatile, you can add other vegetables or take some away. Change it up and make it your own.
