1 lb. fresh spinach, washed, patted dry and coarsely chopped
1 pkg. wonton wrappers, cut into 1/2-inch strips
1 cup oil for frying

Dressing:
1 cup powdered sugar
1/3 cup cider vinegar
1 tbsp. fresh lemon juice
1 1/2 tsp. dry mustard
2 tsp. salt
1/4 tsp. garlic powder
1 cup vegetable oil
2 tbsp. sesame oil
1 tbsp. sesame seeds, toasted

Divide spinach into 6 individual salad bowls; set aside. In a medium saucepan, heat oil. Add wonton strips 10 at a time and fry until golden brown. Drain on a paper towel-lined plate; set aside. Dressing: In a medium bowl, whisk powdered sugar, vinegar, lemon juice, dry mustard, garlic powder and salt until well-blended. Let sit for 15 minutes, whisking every 5 minutes until mixture is the consistency of honey. Gradually whisk in both oils until dressing is well-combined and thickened. Stir in sesame seeds. Drizzle dressing on top of each bowl of chopped spinach, then top with fried wontons.

When I originally saw this recipe, I could not believe the amount of powdered sugar in the dressing. I was very skeptical, but decided to give it a try. OMG...it was unbelievable! The powdered sugar gave the dressing a nice thick consistency. Everyone who tries it, loves the taste!
