Mandy Gillis

2 lbs gr. beef
1 onion chopped
3 carrots chopped
4 stalks celery chopped
2 (28 oz) cans diced tomatoes undrained
1 (16 oz) can red kidney bean, drained
1 (16 oz) can white kidney beans, cannellini, drained
32 oz beef stock
3 tsp oregano
2 tsp pepper
5 tsp parsley
1 tsp tabasco sauce
1 (20 oz) jar spaghetti sauce
8 oz ditalini pasta, tiny round

This recipe makes a huge batch. I mix it in a very large soup pan and divide it between two crock pots. For smaller batch divide ingredients in half.
Brown meat.
Mix all ingredients except pasta.
In crock pot low 7-8 hrs, High 4-5 hours
Pasta last 30 minutes

I like to make soup the day before but I don't add Pasta. It has more flavor. I either cook pasta al dente and add or add when soup is heated 30 minutes before serving.
