Mandy Gillis

1/4 c butter
1 onion finely chopped
1 clove garlic or 1/4 tsp garlic powder
1/3 c flour
1 1/2 cup chicken broth
1 1/2 c milk
2-3 cups chopped cooked chicken
1/2-1 tsp salt
1/4 tsp pepper
your choice of biscuits

I use bone in thighs, legs and a breast of chicken. I salt and pepper them and brown them in a pan with olive oil and add 2 c water and simmer them for 1 1/2 hours. I use the broth then in my recipe. You don't have to do this. you can use reg chicken broth.

Melt butter in 3 qt. sized sauce pan
Add onion and garlic and saute until onions are tender
Stir in flour until it absorbs butter
Mix chicken broth and milk together and gradually add
Cook and stir until mixture boils. Boil one full minute
Sir in chicken, salt and pepper
Simmer and stir for 15-20 minutes

Serve over biscuits, noodles or rice
