2 whole boneless chicken breasts
3/4 c corn starch
1/3 c cooking oil

SAUCE
1/3 c fresh lemon juice
1/4 c sugar
1 1/2 tsp light soya sauce
1 tbsp oil
1/4 tsp salt
1/3 c chicken broth
2 tsp cornstarch

4-5 lemon slices
2 c shredded iceberg lettuce

Directions:
Directions:
Cut breasts in half
Pound slightly
Sprinkle with salt
Pat cornstarch on all sides of breast pieces
Let stand several minutes. Add more cornstarch if needed
Let stand at least 15 minutes

Combine sauce ingredients and cook stirring constantly until thick

Heat oil in 10"skillet
Put chicken in hot oil and cook on both sides until golden
Drain on paper towel and cut in 1/2" strips
Arrange on serving platter on top of lettuce
Pour sauce over
Garnish with lemon slices
Serve with rice
