1 (1 lb.) pkg. turkey or regular sausage, thawed
8 hard cooked eggs
Approxi. 16 Ritz crackers
2 uncooked eggs
Optional - chili sauce

Directions:
Directions:
Divide sausage into eights. Shape each into four inch patties and wrap around the hard-cooked eggs covering egg completely.

In a small mixing bowl beat the two eggs. Roll each sausage wrapped egg in the beaten egg, then roll in 2/3 cup Ritz crackers. Bake in shallow pan in a 375 degree oven for 25-30 minutes or until sausage is done. Serve warm or cold with chili sauce.

Note: Turn to brown all sides evenly while baking. Allow for different egg sizes.
