1 can chickpeas, drained and rinsed
1 tsp chopped chipotle chili, canned in adobo sauce
1 garlic glove minced
1 table tahini
Black pepper to taste
Water, as needed
1 lb. sweet potato (roughly two medium)

Directions:
Directions:
Preheat oven to 400 degrees, pierce potatoes several times with a fork. Place on a foil lined baking sheet for easy clean up. Bake for 1 hour or until sweet potatoes are tender. Cool slightly and peel and set aside.

In your food processor, add your cooled sweet potato, chickpeas, chipotle chili, garlic, fresh lime juice and tahini.

Puree until smooth and thin with up to 2 tablespoons of water if necessary. Season to taste with black pepper.

Refrigerate up to 1 week in refrigerator. Garnish with olive oil and smoked paprika

I first saw it in Oxygen magazine by Tosca Reno. I wasn’t sure if Ii liked hummus so when Ii came across this recipe, I thought it sounded interesting and decided to try it. I wanted something different to eat with carrots. This is the most tasteful hummus you will ever eat. I make it at least once a month
