Ingredients:  
1 stick butter or margarine
1 bunch shallots, finely chopped
cup flour
1 can Cream of Mushroom soup
1 can Cream of Celery Soup
12 ounce crawfish tails
1 tablespoon cooking sherry or white wine
Salt and pepper to taste
1 teaspoon hot sauce
16-20 pastry or mini pie shells (prepared according to directions)

Directions:
Directions:
Melt butter or margarine over medium heat and cook chopped shallots for 5 minutes.

Thoroughly blend in flour, then add both soups.

Cook another 5 minutes, then add crawfish tails, sherry or wine, salt and pepper, and hot sauce.

Heat thoroughly, then fill pastry shells, and top with sprig of parsley for garnish and serve.
