2 eggs, beaten
1 tablespoons Dijon mustard
1 tablespoons honey
1 tablespoon Frank's hot sauce
kosher salt and pepper
1 1/2 cup panko bread crumbs
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1 large package chicken breasts

Preheat the oven to 400 degrees. Cover a baking sheet with heavy duty foil, and then place a wire rack on the sheet, and spray with no-stick spray.

In a pie plate, whisk the eggs, mustard, honey, hot sauce, salt and pepper until thoroughly combined.

In another pie plate, combine panko, salt pepper, paprika, cayenne, and garlic powder.

Dredge the chicken in the wet mixture and then in the dry mixture, and then arrange on the wire racked lined baking sheet. Then give each chicken a shot of the cooking spray.

Put on the upper rack of the oven and bake until the chicken is golden and crisp, about 35 minutes.
