1 large butternut squash *easiest: buy the pre-cut butternut
Olive oil
5 cloves garlic
salt
pepper

Directions:

Preheat oven to 400. Peel and dice butternut squash (easiest" buy the pre-cut squash in the produce section of your grocery store.) Place squash in large roasting pan (should be in a single layer, can use large cookie sheet lined with foil if you don't have a roasting pan). Mince (or press) garlic, place over squash. Drizzle liberally with olive oil, stir to mix. Sprinkle with salt and pepper. Roast at 400º for about 30 minutes. Test with fork, if not soft in the middle cook for 10 more minutes and retest.
