Base: Precooked Pie Shell

Topping: 3/4 cup Mozzarella cheese shredded, plus a handful
1 cup Hellman's mayonaise
1/2 cup Parmesan cheese, grated

Filling: 5 Fresh Tomatoes, diced and drained a bit so they're not too juicy
1/4 cup Fresh Basil, chopped
3-5 Garlic cloves, depending on your taste
Salt and Pepper to taste

Preheat oven to 350*. Spread a handful of mozzarella around the bottom of the precooked pie shell. Place in oven for 3-5 minutes, just until cheese is melted and brown. This will help the shell maintain its shape once the filling is added.

Put garlic and basil into food processor and whirl until finely chopped. You can increase or decrease both the basil and the garlic depending on your taste.

Mix together the tomatoes, basil and garlic, pour into pie crust.

Mix together the topping and spread it carefully and evenly over the top of the filling.

Bake pie at 350* for 20 minutes. Enjoy hot or at room temperature.

This can also be made as a dip without the pie crust and served with pita chips.
