3 eggs.
1 cup sugar
2 t. lemon juice
2/3 cup pumpkin
3/4 cup flour
1 t. baking powder
2 t. cinnamon
1/2 t. nutmeg
1/2 t. salt
1/2 t. ginger

Directions:
Directions:
Beat eggs and sugar for 5 minutes. Add lemon juice and pumpkin mixing well. Fold in remaining ingredients. Put in greased and floured 9 x 13 pan. Bake for 15 minutes at 375 degrees. When done, turn out on dish towel sprinkled with powered sugar. Roll towel and all. When cool, unroll and spread with filling.
Filling
1 cup powered sugar
2- 3 oz. pkg. cream cheese
1 t. vanilla
Mix and spread on cooled pumpkin roll. Reroll in wax paper and put in refrigerator.
