Ingredients:  
1 lb. red potatoes, cubed
3 Tblsp. water
3/4 kielbasa sausage, sliced
1/2 cup chopped onion
1 Tblsp. olive oil
2 Tblsp. brown sugar
2 Tblsp. apple cider vinegar
1 Tblsp. Dijon mustard
1/2 tsp. thyme
1/4 tsp. pepper
4 cups fresh spinach
1/3 cup cooked crumbled bacon

Directions:
Directions:
Cook potatoes til tender, drain. In a skillet saute the sausage on onions til onion is tender and sausage is slightly brown. Combine brown sugar, mustard, vinegar and pepper in a bowl and stir until sugar is dissolved. Add to skillet and bring to a boil. Add in bacon and spinach until wilted. Serve.
