1/3 cup all-purpose flour
1/3 cup whole-wheat flour
1/4 cup fine cornmeal
1/4 cup cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1/3 cup canola oil
2 egg whites
1 tbsp granulated sugar

1. PREHEAT waffle maker according to manufacturer’s instructions.
2. WHISK flours with cornmeal, cornstarch, baking powder, baking soda and salt in a large bowl. Stir in buttermilk and oil, being careful not to over-mix.
3. BEAT egg whites in a medium bowl with an electric mixer until soft peaks form when beaters are lifted, about 1 min. Sprinkle in sugar and continue beating until glossy peaks form, about 1 more min. Fold egg white mixture into batter until just combined.
4. SPRAY waffle maker lightly with oil. Ladle in batter and cook until golden, 3 to 4 min.
