2 1 1/4 lb lobster shell and claws
1/4 cup vegetable oil
2 carrots chopped
2 onions chopped
5 cloves of garlic smashed and cut into pieces
2 tabs fresh thyme
2 tabs fresh tarragon
2 bay leaves
1/4 cup tomato paste
1 1/2 cups of wine
8 cups of water

crack lobster shells and bodies
In 8 qt stock pot saute shells for 15 minutes
Add chopped onion, carrot, garlic 10 minutes
add tomato paste and incorporate into mix
add tarragon, thyme, bay leaves
add 1 1/4 cups of wine and evaporate to half
add 8 cups of water
simmer for 1 hour
