2/3 cup Tarragon Vinegar
1/2 cup salad oil
1 medium clove of garlic, crushed
1 Tbsp. sugar
2 Tbsp. water
1 1/2 tsp. salt
Dash freshly ground pepper
Dash hot sauce

1 medium onion sliced in rings
2 cans whole mushrooms, drained
or 2 pints fresh mushrooms washed and trimmed

Directions:

Combine first 8 ingredients

Pack onions and mushrooms in jars
Cover with marinade
Refrigerate 8 hours or over night
Drain and serve.

I have used white wine vinegar and put 3 sprigs of tarragon in it and let it sit for a week.
