4 lbs good cooking apples
1 c apple cider vinegar
2 c water
Sugar (about 4 c)
Salt
2 tsp cinnamon
1/2 tsp ground cloves
1/2 tsp allspice
Grated rind and juice of 1 lemon

Directions:
Cut the apples into quarters. Do not peel or core. Put into a large pot. Add vinegar and water. Cover and bring to a boil. Reduce heat to simmer and cook until apples are soft, about 20 minutes. Remove from heat. Ladle apples into a foodmill and force pulp through into a large bowl. Measure puree. Add 1/2 c sugar for each cup of pulp. Stir to dissolve sugar. Add a dash of salt and the cinnamon, ground cloves, allspice, lemon rind and lemon juice. Taste to adjust seasonings. Cook uncovered in a large pot on medium low heat, stirring constantly to prevent burning. Scrape the bottom while you stir. Cook until thick and smooth.
