1 tbsp. olive oil
4 rashers streaky bacon finely chopped
2 medium onions finely chopped
2 carrots finely chopped
1 stick celery finely chopped
2 cloves garlic minced
Dried rosemary to taste
500gm pork or beef mince
1 tbsp. dried basil
2 cans whole Italian tomatoes
2 bay leaves
1 tsp dried oregano
1 beef stock cube
1/2 cup tomato paste
125ml red wine
Parmesan cheese
Spaghetti as required
1 Red chilli finely chopped. Optional

In a saucepan heat the oil adding the bacon and fry for 10 minutes until crisp. Reduce heat and add onions, carrot, celery, garlic and rosemary. Fry for 10 minutes continually stirring until the vegetables have softened. Add the mince still stirring until meat is cooked. Add canned tomatoes, basil, bay leaves, oregano, tomato paste stock cube chilli and wine. Carry on stirring, breaking up the tomatoes, bring to the boil, reduce to a slow simmer, cover, and cook for about one and a quarter hours, stirring occasionally. By now you should have a rich, thick sauce. Add the parmesan cheese. Taste for seasoning and adjust to suit.
Whilst the sauce is cooking, prepare the spaghetti following pack instructions. Drain the spaghetti and stir in the Bolognese sauce.
Serve with extra parmesan and decorate with whole basil leaves if you have them.
