2 cups sugar
1 cup light corn syrup
1/2 cup water
1 1/2 tsp cinnamon oil (or whatever flavor you choose)
Red food coloring (or whatever color is appropriate for the flavor you choose)
Powdered sugar

Directions:
Directions:
Combine sugar, syrup, and water in a medium size saucepan. Heat to boiling, stirring constantly, wiping crystals from side of pan. Lower heat and simmer, stirring occasionally, to 300º. Or a small amount of mixture will separate into threads that are hard and brittle when dipped into cold water. Remove sauce pan from heat. Stir in flavoring and a few drops of food coloring. Pour onto a large oiled cookie sheet. Cool, break into smaller pieces and dust with powdered sugar.

You can make this hotter or milder by adjusting the amount of cinnamon oil. Clove oil is also very good.
