2 cups milk
2 squares unsweetened chocolate, chopped fine
1 cup sugar
1/2 tsp salt
5 Tbsp flour
3 eggs yolks
2 Tbsp butter
1 1/2 tsp vanilla
Single pie crust, baked

Directions:
Directions:
Scald milk in top of double boiler. Add chocolate to hot milk. When melted, beat until blended. Mix together sugar, salt, and flour. Add to milk mixture, stirring frequently. Beat egg yolks until thick and add to milk mixture. (Stir a little of the hot milk mixture into the egg first, then stir the egg mixture into the hot milk mixture.) Cook milk mixture over hot water for 10 minutes; stirring frequently. Blend butter and vanilla into milk mixture. Cool to lukewarm; stir occasionally. Fill crust.

If making meringue, beat the 3 remaining egg whites with 1/4 tsp cream of tartar until foamy. Slowly add 3/4 cup sugar and beat until stiff peaks form and sugar is dissolved. Spread over top of warm pudding; spreading to the edge of the crust to seal. Bake for 12 - 15 minutes at 350 º. Peaks should be lightly browned.
