1 lb pinto beans (2 1/2 cups)
1 large onion, chopped
4 T butter
1/2 tsp pepper
8 oz jack cheese, shredded
water
1 1/2 tsp salt

Directions:
Directions:
Cover beans with water, add onion and bring to boil.
Boil 2 minutes, then take off heat and let sit for 1 hour.
Do not drain water, but add enough water to cover beans, bring to a boil. Turn down heat and simmer beans for 1-2 hours, until tender. Add more water to keep beans covered, if needed.
When beans are done, drain most of the water, then mash with a hand mixer.
Add butter, salt, pepper, and cheese and continue beating until the beans are soft and creamy.
