1 - 2 Cloves chopped garlic
Virgin Olive Oil
Capers and/or artichoke hearts
Baby Spinach

Directions:
Directions:
Pour a little olive oil into a pan and heat it.
Add chopped garlic.
Pile in the bag of baby spinach and stir until wilted.
Add capers and serve

Salt and pepper, or Creole Seasonings to taste.

Sr. Alicia Costa was born in New Orleans, LA. She entered the Community in 1969.

Sr. Marie Lucille Dix made this for the Sisters at St. Mary's Academy on one of her Sunday turns to cook. I didn't care much for spinach, or anything green for that matter, but this recipe really hooked me onto baby spinach. Now, I eat almost anything green.
