Directions:Peel plantains and place in a pot of hot water. Allow plantains to cook over medium heat for 20-25 minutes. When cooked, remove from pot and allow to cool.
In the Garifuna culture the plantains are then ready to pound or beat by placing them in a wooden mortar and beating them with a wooden pestle. If one does not have these implements, one may cut the plantains into much smaller pieces, and place them in a regular blender and chop them. Add a little water to soften.
Season and fry the fish before preparing the gravy.
Gravy:
If cooking with coconut milk, pour a can of coconut milk to 3 cans of water into the pot. Stir to mix. Add garlic, chopped green peppers and onions. Mix. Cook for about 5 minutes over medium heat. Add the fish and cook for 15 minutes, prodding the coconut milk to prevent curdling. Salt and pepper to taste.
Serving:
Once both plantains and gravy are ready, dish out the coconut milk gravy and fish into individual bowls. Dish out the plantains on medium sized flat plates. Dip a bite size plantain with a tablespoon in the gravy. Alternate this with fish.

Hudutu is one of the popular foods of the Garifuna culture/people. It can be made with green plantains or green bananas. There are variations of it. Some people like to add one or two ripe plantains to the green ones. Others prefer it with green bananas because of health issues.
It's a good fundraiser before special events celebrated in Belize. The other cultural groups and tourists are very fond of it. Or you can just make it for your family whenever you feel like eating it.
