1 lb. Pork tenderloin trimmed and cubed
2 T. Olive oil
1 chopped Onion
1 1/4 tsp. Cinnamon
1 tsp. Ground ginger
1/2 tsp. Turmeric
1/4 to 1/2 tsp. Cayenne pepper
1 T. Flour
1 to 2 c. Chicken broth
2 Potatoes peeled and cubed
2 Sweet potatoes peeled and cubed
2 Carrots peeled and cubed
1 c. Dried fruit - cranberries, pineapples, mangos, or any dried fruit of your choice.

Coat the pork together with all the seasonings and flour.

Heat the oil in a Dutch oven on medium heat and cook onions, stirring frequently for approximately 3 minutes.

Add pork stirring frequently until browned, appropriately 3 minutes.

Stir in one to two cups of chicken broth.

Bring to a boil, reduce heat and cover appropriately 10 minutes.

Add sweet potatoes, potatoes, carrots, and dried fruit and simmer, covered until vegetables are fork tender.
