Directions:Mix flour, baking powder, shortening, salt, and water (or milk.) Work through the ingredients with one hand. Keep working it through until it forms the dough. Make sure that the water (milk) does not create a sticky dough, but just right enough to set for 15 minutes.
After 15 minutes, knead through the dough until it becomes smooth. Set it aside again for another 15 minutes. Cut the dough into six or eight pieces.
Knead through each piece and work it into balls. When they are settled for 5 minutes, take each ball and flatten it with your hand. Using aknife, make two short cuts into the dough.
Heat oil in frying pan. When hot, place flattened dough in the pan. When the edges are golden, flip.
Remove from pan and place on paper towels to absorb extra oil. Enjoy them while they're hot. |

As a young adult, my aunt used to prepare "Fry Jacks" for breakfast. It was one of my favorite dishes.
My aunt prepared them for breakfast, or as a side-dish, served them with fried fish or fried red beans as done in restaurants in Belize.
When I visited Dangriga Belize, after many years in the convent, my aunt prepared them for my breakfast. It was a delicious breakfast. I have not had them for many years.
