Spinach Pie Recipe

3 - 10 oz bags of fresh baby Spinach
1 1/2 lbs Feta Cheese - crumbled
2 T Olive Oil
6 Eggs
Dill - a small hand full of dried dill
2 Onions - chopped
1 stick of butter -melted
Butter Flavored Pam
1 lb of Fillo dough

Directions:
Directions:
Preheat oven 350º.

Saute chopped onions in olive oil until translucent, then add the spinach and mix until wilted. Set aside.

Mix the eggs, Feta cheese, and dill. Add spinach mixture to the cheese mixture.

Spread 1/3 of the melted butter in a lasagna pan.

Start layering:
One sheet Fillo dough, Pam butter spray. Repeat with 5 or 6 more sheets of Fillo dough and Pam butter spray.
Spread 1/2 the spinach cheese mixture on top of Fillo dough. Place another sheet of Fillo dough on top of spinach cheese mixture then spread another third of the melted butter on that sheet of Fillo. Layer as before with Fillo sheets and butter flavored Pam.

Spread the remaining spinach cheese mixture. Continue layering Fillo dough alternating with the butter flavored Pam. On the last sheet of Fillo dough spread the remaining melted butter.

Cook one hour.

Remember to keep the Fillo sheets covered when you are not using them or they may dry out and become brittle. I just roll them up in their original plastic cover.
