4 lbs. eye of round roast (have butcher slice as thinly as possible)
2 loaves white bread, ground
1 medium diced onion, small
1/2 cup parmesan cheese
1/2 cup minced parsley
2 minced garlic cloves
2 hard cooked eggs, minced fine
salt and pepper to taste
extra virgin olive oil

Directions:
Directions:
Place bread crumbs in large bowl and add all ingredients except eye of round. Add enough oil to moisten the mixture - add a little water if it's too dry. Place about 1 1/2 teaspoons of mixture on each piece of meat and roll up - place on metal or wooden skewer. Make about 6 roll-ups on each skewer. When finished, fry each skewer in oil with a little butter until browned and serve.
