1 eggs
1/3 C honey
1/2 C vegetable oil (can use coconut oil)
1/2 C brown sugar
1 t vanilla extract
1 t salt
1/2 t baking powder
1/2 t baking soda
1 2/3 C flour
1/3 C cocoa powder
2 C shredded zucchini (pat with paper towel to remove excess moisture)
1 C chocolate chips (plus a few more for the topping)

Directions:

Preheat oven to 350 and grease large loaf pan or 4 mini loaf pans.

In large bowl, combine eggs, honey, oil, brown sugar and vanilla. Add salt, baking soda, baking powder, cocoa powder and flower. Stir well until all ingredients are combined. Add zucchini and chocolate chips. Pour batter into greased pans until about 2/3 full. Sprinkle a few chips on top.

Bake for 40-50 minutes or until toothpick comes out clean (reduce baking time if using mini pans). Remove from oven and allow to cool about 5 minutes before removing from pans.
