11/2 cups long grain rice
3 tsp sesame oil
2 eggs lightly beaten
1 tbsp. peanut/rice bran oil
150gm diced bacon (optional)
100gm baby cooked prawns
1 cup snow peas
3 eschallots sliced thinly.

Directions:
Directions:
Cook the rice following instructions until tender. Drain and rinse under cold water. Spread onto a tray and refrigerate uncovered overnight until dry. Heat a wok over medium heat adding 1 tsp sesame oil. Swirl the oil around until it runs up the sides. Pour in the lightly beaten eggs and cook for about 1 minute. Remove from wok, roll up and cut into thin slices. Reserve for garnish.
Increase the heat to high. Add remaining sesame oil and peanut or rice bran oil to wok. Swirl around again add the prawns and diced bacon, stir fry for about 2 minutes. Add rice and stir fry for 1 minute. Add peas, eschallots and stir fry for a further minutes or until heated through. Spoon onto plates and add the omelette on top to serve.
