1/2 oz. dried Porcini Mushrooms
1 lb. Bella Mushrooms, sliced
2 Tbsp. Vegetable Oil
2 Tbsp. Butter
1 Onion, chopped
1 Celery rib, chopped
2 Carrots, chopped
2 1/2 Qts. Beef Stock
1 tsp. Sugar
2 cups Barley

Directions:
Directions:
Put dried mushrooms in a small bowl and add warm water to cover. Soak 30 minutes and strain but reserve water. Chop mushrooms and set aside. In stockpot, heat oil and butter and saute onion, celery and carrot for 2-3 minutes. Add mushrooms and saute 2-3 min. Add stock, reserved water, sugar and bring to a low boil. Add barley, reduce heat, covering partially. Simmer until barley is tender 50-60 min. Season with salt and pepper to taste.
