1 or 2 leeks depending on size
1 large onion
2 medium potatoes
100gm butter
Milk
Pepper & salt to taste
Chopped chives
Chicken stock or water and stock cubes.

Directions:
Thinly slice the onion and put into the saucepan with the butter, on very low heat gently sweat them until soft. Do not allow to brown. Meanwhile wash the leeks and finely slice then add to the onions. Peel the potatoes and cut into smallish cubes. Add potatoes to the onion/leek mixture. Give a really good stir so that everything is coated with butter. Add one litre of stock and bring to the boil, immediately reduce heat to a gentle simmer and cook until the potatoes are soft. Allow to cool then place everything in a food processor or blender, adding 1/2 cup milk. Reduce to a thick soup. Heat up to serve adding the chives to garnish.
