Cucumber Salsa Recipe

2 c. finely chopped cucumber, seeded and peeled
1/2 c. chopped seeded tomato
1/4 c. chopped onion
2 tbsp minced fresh parsley
1 seeded and chopped jalapeno pepper
4-5 tsp chopped cilantro
1 garlic clove chopped
1/4 c. reduced fat sour cream
1-1/2 tsp. lemon juice
1-1/2 tsp. lime juice
1/4 tsp. ground cumin
1/2 tsp. seasoned salt

in a small bowl combine 1st 7 ingredients. In another bowl combine sour cream, lemon, lime juice, cumin and season salt. Pour mixture over cucumber mixture.

Enjoy with baked tortilla scoops.
