1 egg
1 cup buttermilk
2 Tbsp shortening
1 cup flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp soda
1/2 tsp salt

Directions:
Directions:
Beat egg. Add remaining ingredients in the order listed. Beat using electric mixer until smooth. May need to add a little more flour to desired consistency.
Heat griddle, grease if necessary. Test by dropping a few drops of water onto griddle, if water jumps around, the griddle is the right temperature.
Pour batter onto hot griddle. Turn pancakes as soon as they puff up and are full of bubbles.
