1 & 1/2 c. white whole wheat flour
1 & 1/2 c. grated carrots
1/2 c. brown sugar
1 tsp. baking soda
1 & 1/2 tsp. pumpkin pie spice
1/4 tsp. salt

2 large eggs
1/3 c. apple sauce
1/4 c. canola oil
1 tsp. vanilla extract

Directions:
Directions:
In a large bowl combine first 6 ingredients. In a second bowl beat eggs, applesauce, canola oil & vanilla extract. Add egg mixture to flour mixture. Stir batter just until mixed. Grease muffin tin or add muffin papers. Fill cupcake tin and bake in 375 oven for 15 minutes. Check doneness by inserting toothpick in center. The toothpick will come out clean when done. Cool in pan on rack for 5 minutes.Transfer muffins from tin to rack & let cool completely.

Cream Cheese Glaze (optional)
Beat 2 oz. cream cheese, softened; 3 Tbsp. confectioners' sugar; and 2 to 3 Tbsp. milk until smooth and slightly runny - drizzle over muffins.
