4 tilapia filets
1/4 cup of mayo
1/2 cup of cheddar cheese
juice from 2 lemons or limes
seasoning (salt, pepper, and dill to taste)
2 garlic cloves (chopped), I like to use roasted garlic here!

We eat a lot of fish and this is a different, but delicious way to cook it up. And, it's in the slow cooker.

You will be making individual packets. Place each tilapia filet on a torn sheet of aluminum foil big enough to fold over the filet (after you add the sauce).

For the sauce, mix the mayo, cheese, lemon juice, seasoning, and garlic in a bowl. Place a dollop of sauce on each filet. Flip each filet over so that both sides are coated. Fold over the foil to make a packet.

Place each fish packet into the slow cooker and cook on high for 2 hours. Be careful when removing, the fish packets will be hot and steamy. And, if you are like me and use frozen filets, there will be some hot fish juice that could spill out!

Unwrap each packet and serve your filets with a salad and rice...or whatever sides you like.

This recipe doubles very nicely!
