3 parts olive oil
1 part apple cider vinegar or balsamic vinegar
agave, sugar or honey
shallot, finely diced
Dijon mustard, tiny bit
Salt
Pepper

Directions:
Directions:
Put vinegar in a bowl or blender. Add olive oil in a slow stream to emulsify. Stir in remaining ingredients.

Serve over tender green lettuce, Bibb.

Change it up a bit, add thyme, rosemary, cilantro or finely chopped Serrano chile.
