30 cupcake tins with paper liners
Nilla vanilla wafers
3 - 8 oz. pkgs. of cream cheese
5 eggs
1/2 tsp. vanilla
1 c. sugar
Topping
2 c. sour cream
2/3 c. sugar
1 tsp. vanilla
Pineapple or strawberry preserves

Directions:
Directions:
Place one "nilla" vanilla wafer in each liner, rounded side up
Beat cream cheese until smooth adding eggs one at a time. Beat until mixed well. Add 1/2 tsp. vanilla and 1 cup sugar beating until well blended. Fill tins 3/4 full. Bake 40 minutes. Remove from oven and let stand 5 minutes.
Top with a mixture of sour cream, 2/3 c. sugar and 1 tsp. vanila. (about 1 Tbsp. on each) Spoon 1/2 tsp. of strawberry or pineapple preserves on each cake. Return to oven for 5 minutes. Cool and store in refrigerator.
