1 cup shredded cooked chicken ***NOTE***You can buy already cooked rotisserie chicken at supermarkets such as Krogers....It is quick and flavored deliciously for use in chicken recipes!!
1/2 cup chopped celery
1 tablespoon chopped green onion
2 tablespoons chopped ripe olives
2 tablespoon chopped dill pickle ***NOTE*** I buy chopped dill pickle relish!
1/4 cup mayonnaise
1/4 teaspoon pepper
1/8 teaspoon salt
ANOTHER NOTE***I also add 1/2 cup sliced and seedless grapes
4 slices sourdough bread toasted ***JUST ON MORE NOTE!*** I like to use croissants!
2 lettuce leaves

In a small bowl, combine the first eight ingredients. Spread over two toast slices, top with lettuce and remaining toast. Easy-peezy!
