Spanish Rice Recipe

2 med. tomatoes (don't use romas)
3 sm cloves of garlic
1/2 med. onion
4 chicken bouillon cubes
enough water with bouillon to make 4 cups

2 c long grain rice

Monterey Jack cheese

Directions:
Directions:
Place in a 5 cup blender tomatoes, garlic onion and bouillon water.

In a large skillet toast/brown 2 c of long grain rice in 3 T of oil

When rice is browned add the liquid and cook on med high until steam holes appear. Remove from heat and cover let stand for 5-10 minutes until liquid is completely absorbed.

Transfer rice into an oven safe dish then sprinkle with Monterey jack cheese (as much as you like). Put under broiler and brown cheese.
